Cihuatán takes its name from an archaeological site in El Salvador, and the distillery leans hard into that local heritage — it grows its own sugarcane and distills on the country’s central plain, which makes it a rare estate-to-bottle operation in a region better known for exporting bulk spirit. The rums age in the hot Salvadoran climate, which speeds maturation and pushes the sweet, woody character that runs through the range.

Production is column-still molasses rum, most of it bottled at 40 to 43 percent. Indigo is the accessible entry point, XAMAN XO adds a Ceiba-barrel touch, and the aged editions — Sahumerio, Alux, Suerte and the older Nantli — layer in sherry, oloroso, cognac and virgin-oak cask work. The Folklore line collects single barrels, several of them unsweetened and noticeably drier, plus flavored bottlings like the Artesano Pineapple Edition.

In the glass expect vanilla, milk chocolate, caramel, toffee, roasted hazelnut and dried fruit, often over a light body. Reviewers describe the finishes as short and the mouthfeel as thin at standard strength; the Suerte and the Folklore single casks bring more mineral, menthol and spice for drinkers who want less sugar. Alux is rounder and richer, if a touch hot for its age.

Most people drink the aged expressions neat or over a large cube as an after-dinner pour, where the dessert notes suit the moment. Indigo earns its keep in cocktails — daiquiris, rum old fashioneds and tiki builds where its sweetness and vanilla carry through. If you want big funk or high-proof intensity, look elsewhere; Cihuatán is built for gentle, approachable sipping.
