Dillon traces back to a historic Martinique estate, and the modern range is produced at the Depaz distillery using Dillon’s own stills and cane harvested from the brand’s plots. The rums carry the Martinique AOC, the appellation that governs how agricole rhum is grown, fermented and distilled on the island.

Production starts with fresh sugarcane juice rather than molasses, which gives agricole its grassy, vegetal backbone. The Blanc Canne Rouge is a monovarietal expression from red cane, released by harvest year, and reviewers single it out for its floral nose, lime and tropical-fruit character and spicy undertone. The aged line includes the VSOP (an AOC agricole in the four-to-five-year range), the Rhum Très Vieux, the Rhum Vieux Agricole at around seven years, the VO and the occasional single cask drawn from older stock.

In the glass the blancs taste bright and herbal, with sugarcane syrup, citrus zest and pepper.
