Doorly’s is the more accessible face of Foursquare, the Barbados distillery run by Richard Seale, whose name carries weight among rum drinkers for transparency and refusal to add sugar. Where the Exceptional Cask Selection releases chase complexity, the Doorly’s line is built for everyday drinking at a fair price.

Production follows the Bajan template: molasses fermentation, a blend of column and pot still distillate, and aging in tropical heat mostly in ex-bourbon barrels. The 12 Years spends about 90 percent of its life in bourbon casks with the rest in Madeira, while the XO Sherry Finish adds a sherry-cask closer. Nothing is sweetened or flavored, which is why the profile reads dry rather than syrupy.

The range covers the 3 Years White, 5 Years, 8 Years, 12 Years, 14 Years and the XO expressions. Expect vanilla, caramel, toasted coconut, oak and warm spice throughout, with darker chocolate, dried fruit and cinnamon emerging in the older bottlings. Reviewers regularly flag that the wood can outrun the fruit, and that the 40 percent bottlings feel gentle.

How people drink them tracks the age. The white 3 Years is a cocktail rum first, praised in daiquiris and rum punch and passable neat. The 5 Years is a go-to mixer for rum punch, Old Cubans and rum and cola. The 8, 12 and 14 Years cross over as sippers, with the 14 the fullest and most fruit-forward of the standard line. A common serve is a simple Bajan-style punch: two parts rum, one part lime, one part cane syrup, a few dashes of Angostura.
