Doorly’s carries the name of a historic Barbados merchant house, but today it is produced by Foursquare, the island distillery that Richard Seale turned into one of rum’s most respected names. Where Foursquare’s Exceptional Cask Selection (ECS) chases enthusiasts, Doorly’s aims lower on price and higher on availability, which is why it shows up so often as a first “serious” rum.

Production follows the classic Bajan template: molasses fermentation, a blend of column and pot still distillate, aging predominantly in ex-bourbon barrels, and a firm no-sugar, no-flavoring policy. The 12-year, for instance, spends most of its life in bourbon casks with a slice finished in Madeira. The XO Sherry Finish adds a sherry-cask top note, which reviewers describe as present but restrained.

The range stretches from the 3-year white through 5, 8, 12 and 14-year expressions, plus the XO and XO Sherry Finish. Expect vanilla, caramel, coconut, toasted and sometimes cedary oak, baking spice, and darker fruit in the older ages. The common criticism is that the gentle 40-43% reduction can let the wood dominate, and the younger bottles finish short.

How people drink them splits by age. The 3-year white and 5-year are mixing workhorses, named again and again for daiquiris, rum punch and rum-and-cola. The 8 and 12-year straddle sipping and cocktails, and the 14-year is the one most drinkers reach for neat, often rated above 8/10.
