Distillerie Poisson has been making rum on Marie-Galante, the small island off Guadeloupe, since the 18th century, and Père Labat is its house name. Jean-Cédric Brot has owned the estate since 2007, and the recent BIO Blanc marks the brand’s first organic bottling, made from cane planted on virgin island soil.

Production sticks to the agricole method: pure sugarcane juice rather than molasses, fermented with baker’s yeast (often 72 hours, up to five days on the organic lots), then distilled in a copper creole column. The unaged whites rest a few months in stainless steel; the aged rums go into ex-bourbon and ex-cognac casks.

The range is wide. The white side covers the standard blancs, the powerful Brut de Colonne, the monovarietal Canne Jaune, the BIO Blanc, and limited parcel cuvées like Clos Parcellaire Les Mangles. The aged side runs Réserve Familiale, the VSOP Brut de Fût, L’Or, Grand Diplomate, and the older Silver Opus and Black Opus.
