Père Labat takes its name from the priest credited with refining Caribbean distillation, and the rum is made at the Poisson distillery, the oldest on Marie-Galante, a small island off Guadeloupe known for cane-forward agricole. Production follows the agricole route: fresh cane juice, a fermentation that can run around 72 hours, and distillation in a creole copper column rather than a pot still.

The range is broad. At the raw end sits the Brut de Colonne, bottled near 70.7% straight off the still and tasting of menthol, pepper, licorice and citrus. The varietal whites give the lineup its depth: Canne Jaune leans tropical with passion fruit and lemon zest, while the single-plot Clos Parcellaire cuvées (Les Mangles, La Salabotte) run earthy, briny and almost meaty, closer to a Clairin than a polite blanc. Aged expressions include the Réserve Familiale, the Brut de Fût VSOP, and the premium Opus and Grand Diplomate bottlings, which bring vanilla, caramel, chocolate and dried fruit from bourbon, cognac and wine casks.

On the palate the house signature is grassy freshness, orange peel, pepper and a clean cane core. The aged rums trade some of that for wood and spice but tend to stay fairly light in body, which is where the community’s pricing complaints concentrate.
