Providence is the flagship bottling of the Distillerie de Port-au-Prince, a Haitian operation founded in 2018 by Herbert Barbancourt-Linge Jr. and distributed through Velier. It arrived as part of the wider revival of Haitian rum alongside the clairin movement, and quickly became a fixture at events like Whisky Live Paris, where many of the community’s tasting notes were recorded.

Production leans on the island’s traditions: pot-still distillation from cane juice and, in the case of the Dunder & Syrup white, a blend of fresh cane juice and fermented cane syrup using dunder, the leftovers from earlier distillations. Michael Sajous, the clairin producer, supplies cane for some releases. The aged rums are young by most standards, typically three to five years, with a notable run finished in Caroni casks.

The range covers the unaged Rum Blanc First Drops, the funkier Dunder & Syrup blanc, and the annual Haitian Pure Single Rum vintages. The whites taste of fresh grass, sugarcane, olive, glue and citrus, raw and vegetal. The aged versions bring vanilla, honey, milk chocolate, dried fruit and spice from the cask, with a medicinal, tarry edge when Caroni is involved. Reviewers consistently note the 2019 and the later five-year-olds as the most rounded.

People drink the whites in Ti’ Punch and daiquiris, where the farmy grassiness holds up well, and sip the aged vintages neat after letting them open in the glass. These suit drinkers who already enjoy clairin or raw Jamaican funk; they are less of a crowd-pleaser for newcomers.
