Ron Colón took shape as a project centered on El Salvador, blending local column-still molasses rum with high-ester Jamaican stock. The result rarely tastes the way people expect from Central America. Blind, more than one reviewer pegged the flagship as a Jamaican, all tropical fruit, light funk and licorice, with the esters carrying the nose.

Production runs from that core blend outward. The High Proof at 55.5% is the anchor. From there the range branches into the Coffee Infused rums (both a standard and a high-proof version, infused with rejected coffee beans rather than sweetened), the Rumzcal blends that fold in mezcal, and the Salvadoreño RumRye, a crossover with rye whiskey aimed partly at whisky drinkers.

Flavor-wise the honest picture is mixed. The base rum is young, so several tasters mention a rough or slightly kratzig edge alongside the fruit, banana and raisin. The coffee bottlings run deep espresso and dark chocolate, dry rather than sweet, and are strictly for coffee lovers. Rumzcal brings prominent smoke, almost Islay-like, with the mezcal often heavier in the mix than expected. RumRye leans on virgin oak, honey, vanilla and wood spice.

Most people treat these as mixing rums rather than sippers. The High Proof shines in a dark and stormy or fruit-forward tiki drinks, the coffee versions work as a coffee Negroni riff or a float over ice cream, and the RumRye suits an Old Fashioned twist. If you enjoy experimental rum and don’t mind a young base, the range rewards curiosity; if you want polished, aged sipping rum, look elsewhere.
