Zacapa 23 is the soft, sweet reference of the range, Zacapa XO adds a finish in ex-cognac casks of French oak for a drier, more elegant edge, Edición Negra rests in heavily charred ex-bourbon casks for a smokier, darker profile, and the 30 Aniversario is deeper and more concentrated. The 23, the Solera Gran Reserva, is the bottle most people mean when they say Zacapa; the XO is the Solera Gran Reserva Especial, and if you are buying it as a gift, it arrives in a wooden box. The rare Royal is the top expression of the range, and limited Reserva Limitada releases appear alongside. Ron Zacapa comes from Guatemala, where Industrias Licoreras de Guatemala makes it from virgin sugar cane honey and ages it at around 2,300 metres in the highlands of Quetzaltenango. Virgin sugar cane honey is juice from the first pressing of the cane, heated, clarified and reduced to a syrup-like concentrate: that is not molasses, but it is not fresh-fermented cane juice like rhum agricole either. The rum matures at a site the brand calls the House Above the Clouds, where it stays cool all year, so maturation runs slower, the cask gives less aggressively, and the rum gains depth instead of raw wood. The same producer also makes Botran, and nearly everything sold internationally as Guatemalan rum comes from this one house.

Sistema Solera is Zacapa's stage-by-stage method of ageing and blending, borrowed from sherry, and it means the 23 on the label names the oldest component in the blend, not the age of the bottle: the Zacapa 23 brings together rums of roughly 6 to 23 years. Instead of leaving one batch to rest and bottling it whole, only part of the oldest cask is drawn off, and it is topped up with younger rum from the tier above. The rum rests in a sequence of ex-bourbon casks, American oak that brings vanilla and caramel, and sherry casks for the darker, dried-fruit side. The style was shaped over decades by master blender Lorena Vásquez, one of the best-known master blenders in spirits. The payoff is a rum that tastes rich and rounded well before its age statement would suggest.

Yes, Zacapa is sold and listed as rum in the EU, and on RumX it carries the category Column Still Rum, even though it is clearly on the sweet side. Independent measurements report roughly 10 to 20 grams per litre of dissolved solids depending on the bottling, usually given as sugar equivalent; that fits the sweet impression, but it is not an official producer figure. The question comes up because the EU spirit drinks regulation (2019/787) classifies a product with more than 20 grams of sugar per litre as a spirit drink on a rum base rather than rum. Zacapa 23 is the sweeter, smoother pour next to Diplomatico Reserva Exclusiva, leaning honey and caramel and feeling a little lighter, while the Venezuelan brings more dried fruit and body; Don Papa from the Philippines is sweeter than Zacapa and more vanilla-forward, an easy crowd-pleaser. All three sit in the soft, sweet sipping-rum camp, so the choice is about style: Zacapa for the smoother pour, Diplomatico for a touch more richness and fruit. Zaya sits in the same sweet lane. Zacapa is built to be sipped neat, at room temperature, in a tulip glass or a tumbler with one large cube. Its sweetness makes it an easy after-dinner pour. It also works in a rum old fashioned or a short, stirred cocktail, but skip it in anything sharp or citrus-led, where the sugar fights the drink. A light chill tames the sweetness if you find the 23 too rich.
