Production starts with GDL’s column-still spirit, which carries a lighter, fruit-forward character of banana and citrus. The core Six Saints rum layers on caramel, vanilla and coconut, landing somewhere between dry and sweet rather than fully in either camp. The range then explores cask finishes: a Madeira Finish, a Pedro Ximenez Finish, an Oloroso Finish, and the unusual Hot & Spicy Tabasco Cask Finish, which delivers a honeyed opening before a long, spicy heat takes over.
