Rum here splits into two worlds. On one side sits Barbancourt, aged in the French cognac style with a smooth, elegant profile that reviewers compare to brandy more than to a Caribbean pot still. On the other sits clairin — raw, unaged spirit distilled from fresh cane juice or syrup at tiny village distilleries like Casimir, Vaval, Sajous and Le Rocher, often using wild fermentation and wood-fired stills.
