What is the difference between Depaz Blanc, Plantation and XO Grande Reserve?
The white Blanc shows green banana, plantain and black-pepper heat, the classic agricole signature, the Plantation balances youth and oak and is the accessible way into the aged range, and the XO Grande Reserve blends 8 and 10 year old rhums into a dessert-like glass of morello cherry, macadamia and rancio. The aged range tames the green lushness of the Blanc into baked tropical fruit, dried fruit and cocoa.
At the far end sit cask-strength bottlings such as the Depaz Small Batch 2002, a 17 year old at nearly 65 percent that the RumX community tags oaky, with vanilla, prunes and apricot, and single casks such as the Depaz Private Cask for Rumclub, tagged with licorice, grass and honey. Why was Depaz built at the foot of a volcano?
Because Victor Depaz came back to the slopes of Mount Pelee after its eruption had killed his whole family: he was a teenager studying in France when the volcano erupted on 8 May 1902 and killed almost everyone in Saint-Pierre. He finished his studies, came home penniless, and at 28 bought 521 hectares just north of the ruined town. On 8 May 1917, the anniversary of the eruption, he began to distill. The volcanic soil made his cane and his fortune both flourish, and from 1941 to 1943 he served as mayor of Saint-Pierre, appointed by the Vichy government.
How is Depaz made?
Depaz is rhum agricole: the distillery takes fresh cane juice under the Martinique AOC, distils it to 70 to 72 percent and ages it on site in mostly ex-bourbon barrels below the Chateau Depaz great house. The estate has around 250 hectares of land around the distillery, water runs down from Mount Pelee through the Roxelane river, and the mill is still driven by a bagasse-fired steam engine, as at La Favorite.
