Depaz

Depaz is the rum born from a volcano. After Mount Pelee wiped out Saint-Pierre and his entire family in 1902, the orphaned Victor Depaz came back and planted cane on the very slopes that had killed them. The distillery he built in 1917 still stands at the foot of the volcano, and its agricole is among the most decorated on Martinique.

The RumX Guide to Depaz

Built on the slopes that killed his family

Victor Depaz was a teenager studying in France when Mount Pelee erupted on 8 May 1902 and killed almost everyone in Saint-Pierre, his family included. He finished his studies, came home penniless, and at 28 bought 512 hectares just north of the ruined town. On 8 May 1917, the anniversary of the eruption, he began to distill. The volcanic soil made his cane and his fortune both flourish, and he later served as mayor of the Saint-Pierre he had rebuilt around.

A top-tier agricole house

Today Depaz belongs to La Martiniquaise, which also owns its sister distillery Saint-James, and the two hold the largest production quotas on the island. Depaz also makes the Dillon brand, distilled on a copper still moved from the closed Dillon distillery in Fort-de-France in 2005. The cane juice is fermented with three yeasts and distilled to 70 to 72 percent, then aged on site in mostly ex-bourbon barrels below the Chateau Depaz great house.

Volcanic terroir, steam-powered mill

The estate owns around 590 hectares of land around the distillery, and over a five-month harvest about 250 tonnes of cane arrive daily. Water runs down from Mount Pelee through the Roxelane river, and the mill is still driven by a bagasse-fired steam engine, one of only two such setups left on the island alongside La Favorite. The mountain's silhouette remains central to the brand's identity.

From bright Blanc to Hors d'Age

The white Blanc shows green banana, plantain and black-pepper heat, the classic agricole signature. The aged range tames that green lushness into baked tropical fruit, dried fruit and cocoa: the Plantation balances youth and oak, and the XO Grande Reserve blends 8 and 10 year old rhums into a dessert-like glass of morello cherry, macadamia and rancio. The volcanic Saint-Pierre story runs through every label.
