What makes Neisson different from other Martinique distilleries?
Neisson makes its rhum agricole with its own native yeast and on an all-copper Savalle still from 1952, at one of the smallest distilleries on the island, which makes under 2 percent of Martinique's rum. Its own yeast strains, in use since 2011, are less efficient and stretch fermentation to as much as five days, but the extra time builds complex aldehydes and esters, the building blocks of fruit.
