South Pacific Distilleries in Lautoka is Fiji’s only rum producer, and its pot-still spirit has quietly become one of the more talked-about styles in the funky-rum world. Most of what reaches enthusiasts comes through independent bottlers rather than official labels, so the name shows up on casks from Maison Ferrand, Transcontinental Rum Line, S.B.S and Rum Artesanal. The house signature is unmistakable: heavy esters, a glue-and-burnt-rubber solvent edge, and a basket of overripe tropical fruit — banana, pineapple, yellow stone fruit.
