High-ester pot-still rum built on burnt-rubber funk and tropical fruit
South Pacific Distilleries sits in Lautoka, on Fiji’s main island, and for years its rum left the country quietly in bulk — showing up under independent labels long before most drinkers knew where it came from. Molasses-based and run through pot stills, the house style leans estery and chemical in the best sense: solvent, glue and burnt plastic wrapped around ripe pineapple, banana and yellow stone fruit.
