Travellers is the rum that put Belize on the map. It began in 1953 as a bar in Belize City, grew into a family distillery under the Perdomo name, and today is synonymous with Belize rum. Its molasses spirit comes off a hurricane-proofed column still in three different marques, and a deep stock of aged casks has made it a quiet favourite of independent bottlers around the world.

From a Belize City bar to a distillery

In 1953 Jaime Omario Perdomo Sr. opened a bar called Travellers in Belize City, then the hub of the colony, named for the international guests who passed through. He sold local rum and blended his own, but struggled to secure a consistent supply, so in the 1970s he partnered with Luis Alberto Espat to upgrade a pot-still operation to column distillation. His sons Romel and Myito joined the business, with Myito now master blender. The family took full ownership in 1989 and rebuilt the distillery in the 1990s around a new three-column still.

Two sites, one of them a museum

Travellers runs from two locations. The distilling happens in the foothills of the Belize Maya Mountains near Belmopan, the capital. Aging, blending and bottling take place at the original Belize City facility, which doubles as a heritage rum museum and tasting room for visitors. Most new-make travels by tanker from Belmopan to Belize City, where it is reduced to 70 percent before going into cask.

Molasses, marques and a hurricane-proof still

The molasses comes from Belize's two sugar mills and is pasteurised to kill wild yeast before a 36 to 40 hour fermentation with dry baker's yeast in six closed tanks, reaching an 8.5 to 9 percent wash. The Katzen International still from 1990 is logically one column but built as two shorter ones, a clever adaptation to limit hurricane damage. It yields three marques by collection plate: a very light spirit at 95 percent, an aging rum near 90 percent, and a high-ester marque at 85 percent.

The independent bottlers' secret

Beyond its own labels, Travellers is a bulk supplier whose rum reaches the world under other names: Holmes Cay, Cadenhead's, S.B.S., Cane Island and the Tiburon brand among them. New-make goes into ex-bourbon casks at 70 percent, with same-vintage barrels occasionally consolidated to slow an angel's share of around 7 percent a year. The aging stock is small by Caribbean standards, about 3,000 casks, which is part of why well-aged Belize rum is sought after.

The pattern is clear: modest house range, prized distillate.
