#6129 26.12.2025 Second day after Christmas and my stomach is finally back to normal, more or less. Time for some nice EDM to blast out in my office while the wife watches Friends...... Nose Medium intense, fruity, floral, spice, light anise, banana, light citrus, faint coconut. Palate Medium intense, fruity, light wood, naturally sweet, spicy, light salt, anise, banana, light honey. Finish Long and warm, light mango, anise, light chocolate, light floral. Empty glass Chocolate, licorice, light mint, mango, light floral. Very good ABV integration after resting for a while.

Very disappointed. I didn't find the alcohol well integrated, it hits hard on the tongue and not much else happens. A nice nose though, but very very disappointed with the palate.

Excellence Rhum has selected here the excellence of Belize. The nose is intensely gourmand with pastry notes: toffee, caramel, viennoiseries, praline, biscuit and brown sugar give the impression of baking a cake. Chocolate, vanilla, chili, nutmeg and roasted wood amplify the roundness of the profile. Coconut and raisins bring fruit and freshness to the whole. A rich, sweet and generous nose. The palate is a striking contrast between power and indulgence. The sweet and pastry notes described above flood the palate, while spices (chili, nutmeg), wood and tobacco warm the profile with the alcohol. The latter is relatively well integrated given its strength and the fact that it is drowned in sweetness. Milk chocolate, coffee and coconut with raisins are also found. The profile is round and extremely drinkable, to the great pleasure of the taste buds. Aeration also does it good. The finish is light and dry, stripped of some of the sugar contained in the liquid. There remains a spicy, chocolatey, caffeinated and above all woody trace, with a bit of coconut and caramel as a bonus, but this remains less marked. A particularly tasty and intense Belize, which has nothing to envy to other releases of the kind.

Already one bottle opened and finished with family. Tonight we take the time to dissect it. 👃 What a treat! Pastry scents dominate this dram; homemade hot milk chocolate with its fine layer of cooked milk, Bourbon vanilla cake, caramel candies, praline, toffee, a steaming coffee, all in a finely melted and spiced woodiness (mild kitchen spices, cinnamon, nutmeg) without perceiving the 65 horses. Some fruity notes appear without being dominant; dried and candied fruits, fresh coconut, light tropical fruits. 😋 Contrast with the nose, the alcohol tickles the taste buds, but it does it sublimely. For a moment the start of the palate is pastry and indulgent then comes a power, an aromatic intensity. Spicy, peppery, vanilla woodiness. Fruits oscillate between dry and candied not knowing which way to go. Dry freshness on tobacco leaves that make the transition to the finish. ⛳ The spicy, vanilla, peppery, chocolatey woodiness that evolves towards some bitter citrus, a bit of heated caramel that turns to licorice. It lasts very long on a fresh and mentholated side. 💡 Really a nice selection from Justin at Bar de l'Ours. In the top of what a very old Belize can offer taste-wise.

An extremely indulgent, pastry-like and vanilla rum. The strength is controlled and the alcohol well integrated. It's very pleasant. The spices and strength balance the indulgence, preventing it from being cloying. Very nice coherence between nose and palate. Honestly, it's a nice surprise.

First of all: a really good traveler! Coconut, praline, orange candy, wooden barrel on the nose. Very soft on the palate (despite the high ABV) with nutmeg, milk chocolate, grapefruit.

Comparative tasting of Belize Fruity and pastry profile. Maintains a certain freshness (citrus) with woodiness not too present. Even though the alcohol is well integrated, it remains strong (+60°).

The nose is extremely indulgent, with caramel, coconut, chocolate, and vanilla. Slight notes of wood and solvents enhance the character of this nose. Impossible to guess the 65% with all this roundness. On the palate, grapefruit attacks first, which the nose did not predict at all. Then it returns to the same indulgent notes as the nose. The finish is long on vanilla, wood, and ultra-dominant grapefruit. It's delicious, you can spend 30 minutes on a few drops.

Extremely flattering nose on vanilla, wood and especially oak cask, even tropical fruits. Very strong palate but it opens up into an explosion of flavors, candy, sugar and what roundness!! Finish with a slight bitterness and nail polish, certainly due to the bottle opening.

👃 coconut like doucelette, almost you can smell coconut cream, a hint of allspice, a smell of banana plant (banana with the smell of the wet and fresh plant), the wood and alcohol blend well 👄 it’s lively, we have quite deep flavors. The wood is there but slides over the coconut, alcohol well integrated with just a little throat effect. The image that comes to mind is a Robinson (local soft cake with dry coconut jam and guava marmalade). Wow. Strength and finesse for this rum. Finish rather long and fresh

The nose of Belize, vanilla, coconut and milk chocolate. On the palate, a real impression of a Belize - New Grove blend. The nose is still there, but with a typical New Grove framework added. Finish a bit below. An excellent rum, especially for a fan of the two aforementioned origins.

A great success this Bélize, a country I know little about.. A slight woodiness on the nose and palate with a crazy explosion of red fruits and nuts!! Only the length is a bit lacking but honestly it's all good.
