Don Papa Sherry Cask 2012
Here's the surprise: this is the Don Papa that isn't drowned in sugar. Members who dread the sticky standard bottling find this one drier, with cherry, raisin, fig and woody sherry spice. But it splits people hard — some love the sherry-driven fruit, others still catch an "artificial" edge and a thin, slightly hot core. A very different animal from regular Don Papa.

Fruity and spicy on the nose with notes of cherry, fig, plum and raisin. A small hint of tobacco and clove. Some acidity in the direction of green apple and tangy Riesling. All in all, mild and full-bodied. In the mouth, unmistakable sherry, cherry, raisin, fig and spicy oak. Also a fine acidity of white wine. Dry. The finish is rather short to medium with a hint of cocoa and some lemon zest. Great rum and not too oversweetened for my taste.

So, the third Don Papa and then it's enough! Clear, clearly sherry on the nose. Slightly sulfured, artificial grape and cherry. Also something spicy smoky woody, direction cherry wood I like to hear. Then clearly caramel and burnt sugar. On the palate, the sherry comes first, with something toasty and woody. But it can't hide the origin (artificial orange-vanilla sugar water). A bit more towards cherry, but thin and too sweet at the back. Don Papa is and remains for me the lowest level. Bad spirit but with super marketing.

This is a rum which was finished in 5 different casks. First finish is done in American oak bourbon casks and then 18 months in 4 different sherry casks; Fino, Pedro Ximinez, Cream and Palo Cortado. A very nice long velvety finish.

8,1:The nose is balanced, round, with molasses, strongly roasted nuts with smokiness, camphor and red fruits, ripe banana. Tangerine brings its bitterness and acidity, making for a rather lively finish. Over time, camphor and wax take on an increasingly medicinal quality. With time, the varnished wood and minty notes come to the fore. It is soft and warm, exhaling aromas of vanilla tobacco and nuts. 8:The palate is dry and astringent, as the sherry cask would suggest. Once again, camphor takes a large slice of the aroma cake. The profile is medicinal, resinous, bit spicy and a little roasted. The blend is quite concentrated, with intense vanilla, ripe exotic fruit and resin, followed by a hint of cereal. 7,7:The finish is quite long and juicy, with exotic fruit and cherry pie, confectionery like.I like this rum, no joke!🙂 Edit: 18.5.25 A little downgrade, but not a bad rum..., 19.4.26

Definitiv nicht was ich von einem Don Papa erwartet habe, nicht mit der puren Chemie der Standardabfüllung zu vergleichen. recht holzig und viel rote Früchte vom Sherry finish. auch relativ herbal und erdig

Surprisingly fruity and spicy nose. On the palate, the ingenious sherry influence comes into its own. A relatively woody bouquet with an interesting spiciness (cinnamon, clove) and intensity. Dry and fruity at the same time. The finish is longer than average and leathery/spicy. The special thing about the unsweetened bottlings from Don Papa is their unmistakable aroma, which cannot be compared with rums from other countries. Around 90 euros is quite acceptable for this rum and the taste experience is worth it anyway.

Pleasant tasting in a Mamacita mexican restaurant in Athens centre right after arrival. Just a small shot for 9 euros as a starter. I expected a very cherry sweet blend, a little surprise and not bad after all.

Överdriven Sherrysmak. Köp en riktig Sherry istället.

Another relatively fruity rum. You can taste 100% that it has a sherry cask finish. This rum has a good note. I found it quite appealing, would definitely recommend it :)

Grosses notes de sherry, cerise, mûre. Profil gourmand et fruité. Encore une fois 0 gramme de sucre ajouté.

Not as sweet as its companions, pleasant as an aperitif. The sherry is very present, which may help.

No, musím připustit, že to rozhodně není nic, k čemu bych se chtěl ještě vracet, na druhou stranu vzhledem k ostatním produktům don papa je toto prozatím nejmín chemické. Ale pořád je to ten don papa :-)

Not as sweet and thick as the normal don papa, but doesn't really taste good. It's somehow too much of everything, seems artificial

Sehr guter Rum
Review by Michal Jurka
The nose is quite nice with clear sherry influence but the taste is quite different and seems bit artificial.
Review by Daniel

Read full review →In fairness if this is how bad their base distillate is no wonder they add the special sauce! This isn't as offensive as their other offerings. It feels toned down but much like when Diplomatico released rums without additives - it showcases how boring the rum off the multi column...
