06.05. 2007 This was a big gathering of friends from all over Asia and we had a great few weeks together. Notes. Medium dark to dark in colour. Nose: light, round, wood, licorice, dried fruit, roasted. Palate: oily, wood, light smoke, licorice, raisin, coffee. Finish: light, oily, wood, roasted, chocolate, orange, spicy.

Guyana is the last home of the wooden still, and the only rum country where the place on the label is almost never the place the rum was made. Its rum, called Demerara after the river, went from 109 distilleries to one, and the estates that closed live on as marks: codes for a recipe, not for a machine. Reading them is the whole skill.
