Cayman Spirits Seven Fathoms
Honey and almond up front, with dried apricot and a marzipan sweetness that made one taster picture "orange bead on a marzipan icing." This is the rum famously aged underwater off the Cayman Islands, and it drinks soft and spiced — nutmeg and a touch of star anise on a medium finish. Most here enjoy it as an easy daily sipper; the one recurring gripe is the mild 40%.

Tasting notes 05.02.2016 with Dirk Becker at the Hanse Spirit: The story underpins the myth of rum. The barrels are matured 12.8 meters under water. The nose is surprisingly fresh for the story behind it. Primarily spicy in the mouth with some sweetness. Medium length finish. Price was already high at the time, but a good rum.

Pure delight, an interesting nose that delivers new aromas with each sample. The taste is bold and complex, with flavours ranging from sweet honey and banana to bitter orange and star anise. A long and busy finish that evolves from smooth bold flavours to a subtle spicy ending. Very nice.

A very exciting and harmonious rum that was stored under water. Only the weak alcohol strength is to be criticized. 4 to 5 percent more alcohol would make this rum a sensational experience.
