Evening bottle kill: That Boutique-y Rum Company – Black Gate 3 Years Old (57.2%) Distilled at Black Gate Distillery in Australia (New South Wales, 5 hours northwest of Sydney), this rum is made from Queensland molasses, fermented for about two weeks with specific yeasts, then double-distilled in pot stills heated by direct fire. Founded in 2012 by Genise and Brian Hollingworth, after years of learning in Scotland, Ireland, and Australia, the distillery was born in a large shed built with the help of friends and neighbors. Production is seasonal: Genise produces the full-bodied pot still rum in summer, Brian the single malt in winter. Rum accounts for only a third of total production, with only 2,000 L/year. Aged in 100 L Tawny wine casks (the Australian equivalent of port). This Batch 2 comes from the same juice as Batch 1 (bottled at 50%), but this time offered at 57.2%, in TBYRC's Australian series Return to Oz. Fun fact: it was supposedly distilled to celebrate the couple's 10th wedding anniversary! Nose: molasses, syrup, dates, clove, tobacco, tea, pineapple Palate: plums, mango, jam, molasses tart, black olive Finish: tannic, with a persistent spicy ginger Selected for our 23 lineup dedicated to Australia. Very bad Q/P ratio (€80 for 50 cl), but a chance to discover a rare and artisanal distillery.
