Cask language No. 14 Chestnut vs. No. 01 Base Rum. The additional 6 months in new-make chestnut cask have darkened the color by 8 shades. Nose: fuller and riper than the base. Seems woody-spicy-fruity but also nutty-oily-fatty. Fruit moves away from lime towards apricot with blackberry, maybe also gooseberry. The sweetness tends more towards maple syrup. Nice aromas. 7.4 Palate: initially hearty maple syrup sweetness with a slightly bacon-salty or fatty nut aroma. The peppery note comes through again. Clearly brioche, which covers the fruit… but most likely apricot again. The cask adds quite a lot of nice things here and makes the rum sweeter and rounder. 7.4

Daring cask language project (Cask Strength) It is to be expected that the best possible rum is not used for such a project. The base rum is comparatively spritzy without special character. 1st Flight: Base Rum / all Oaks Interesting how much the differences are between individual oak types. Mizunara surprised me especially. 2nd Flight: Base Rum / Special Woods Insanely different, everything from bad to good was included. Many thanks for this interesting project.

Absolutely great project. Only learned about it through the Rum X action. A lot of fun to explore. The YT videos are also mega informative. Good choice of base product, good alcohol integration. American: classic 6.3 German: spicy-woody 6.6 French: velvety-oily 7.3 Kiri: surprise 7.4 Mizunara: good complexity 7 Walnut: little influence 6 Chestnut: not so distinctive 6 Mulberry: iodine/smoky 6.2 Cherry: dense 6.8 Pear: normal 6 Ash: orange 6.1 Tokaji: sawdust Caucasian: woody, fruity, fresh 6.4 Carpatian: European Bourbon 7.4 Acacia: multilayered 7 A slightly longer maturation would have been even better to bring out the nuances more. But first you have to manage that. Overall, there are already considerable differences in how it developed. Hats off for the project, very fun and interesting.

Rund, etwas Walnuss, aber insgesamt nicht sehr vielsagend.

The Chestnut finish is an enriching addition to the cask series. Chestnut wood gives the rum a remarkable sweetness and depth without tasting tannic. The combination of maple syrup, nutty and earthy spice makes it soft, round and aromatically profound - ideal for those who appreciate unusual wood notes and full-bodied characters.
