The Ash-finished version — six extra months in a new German ash cask — softens the young Trinidad spirit noticeably: milder nose, caramel sweetness, apple and a bit of mirabelle, then a salty-peppery kick and a licorice-tonka turn on the palate. More an experiment to explore than a knockout pour.

I got it from Michael, what can I say. The high-proof cask language doesn't really convince me, unfortunately. Wood is recognizable anyway, also some spice, but that certain something is missing here. Quite okay, that's it.

Daring cask language project (Cask Strength) It is to be expected that the best possible rum is not used for such a project. The base rum is comparatively spritzy without special character. 1st Flight: Base Rum / all Oaks Interesting how much the differences are between individual oak types. Mizunara surprised me especially. 2nd Flight: Base Rum / Special Woods Insanely different, everything from bad to good was included. Many thanks for this interesting project.

Absolutely great project. I only learned about it through the Rum X action. Lots of fun to explore. The YT videos are also mega informative. Good choice of base product, good alcohol integration. American: classic 6.3 German: spicy-woody 6.6 French: velvety-oily 7.3 Kiri: surprise 7.4 Mizunara: good complexity 7 Walnut: little influence 6 Chestnut: not so defining 6 Mulberry: iodine/smoky 6.2 Cherry: dense 6.8 Pear: normal 6 Ash: orange 6.1 Tokaji: sawdust Caucasian: woody, fruity, fresh 6.4 Carpatian: European Bourbon 7.4 Acacia: multilayered 7 A slightly longer maturation would have been even better to bring out the nuances more. But you have to manage that first. Overall, there are already considerable differences showing how it has developed. Hats off for the project, very fun and interesting.

Cask language No. 09 Ash vs. No. 01 Base Rum. The 6 additional months in the new-make ash cask from southern Germany actually didn't change the color. Let's see what influence it had on the rum otherwise... Nose: definitely less alcoholic and milder than the base, also sweet-spicy-fruity at the start. Very restrained, light citrus notes - not as clearly lime as in the base rum -, apple and a bit of mirabelle, alongside a pleasant caramel sweetness. Slight cocoa and very light smoke at the back. Very nice, fine mellowing of the starting rum. 7.6 Palate: noticeably rounder, less rough and less young. Also initially a salty-peppery peak, but much better integrated into a nice spicy sweetness. The sweetness goes towards licorice and tonka bean, also feels slightly oily-bacon-like. The fruit takes a back seat here, can't even say which kind, most likely apricot or pear. Really tastes balanced and good and thus quite different and better than the base. 7.8.

Wagemut barrel language, 16 times the same base rum aged in barrels made from different woods. Very interesting project (thanks to Flo for sharing). Still similar to the oak barrels on the nose, but on the palate it has its own delicious note.

The ash finish gives the rum a refined balance - gently sweet, spicily nuanced, and remarkably smooth. The light woody note adds a fine, elegant depth without hiding the youthful core. A wonderful addition to the cask language series, ideal for connoisseurs who appreciate subtle nuances and soft harmony.
