N. Kröger Wagemut Fasssprache: Ash Rum N. 09 2023

The Ash-finished version — six extra months in a new German ash cask — softens the young Trinidad spirit noticeably: milder nose, caramel sweetness, apple and a bit of mirabelle, then a salty-peppery kick and a licorice-tonka turn on the palate. More an experiment to explore than a knockout pour.

Fasssprache N. 09 Ash vs. N. 01 Basis Rum. Die 6 zusätzlichen Monate im new-make Eschenfass aus Süddeutschland haben die Farbe tatsächlich nicht geändert. Mal sehen, welchen Einfluss es sonst auf den Rum hatte… Nase: auf jeden Fall weniger alkoholisch und milder als die Basis, dazu süßlich-würzig-fruchtiger zu Beginn. Sehr zurückhaltend, leichte Zitrusnoten - nicht so eindeutig Limette, wie im Basis-Rum -, Apfel und ein wenig Mirabelle, neben einer angenehmen Karamellsüße. Hinten etwas Kakao und ganz leicht Rauch. Sehr schöne, feine Milderung des Ausgangs-Rums. 7,6 Gaumen: deutlich runder, weniger grob und weniger jung. Hat auch zunächst eine salzig-pfefferige Spitze, aber viel besser integriert in eine schöne würzige Süße. Die Süße geht in Richtung Lakritze und Tonka-Bohne, wirkt auch leicht ölig-speckig. Die Frucht geht da eher in den Hintergrund, kann nicht mal sagen welcher Art, am ehesten Aprikose oder Birne. Schmeckt wirklich ausgewogen und gut und damit doch ganz anders und besser als die Basis. 7,8.

Wagemut Fasssprache Projekt (Cask Strenght) Zu erwarten ist, dass für solch ein Projekt nicht der best-mögliche Rum verwendet wird. Der Basis Rum ist vergleichsweise spritig ohne besondere Ausprägung. 1.Flight: Base Rum / alle Oaks Interessant, wie sehr doch die Unterschiede bei einzelnen Eichen-Arten sind. Mizunara hat mich besonders überrascht. 2.Flight: Base Rum / Spezial Hölzer Wahnsinnig unterschiedlich, von schlecht zu gut war alles dabei. Besten Dank für dieses interessantes Projekt.

Wagemut Fasssprache, 16 mal der gleiche Basis-Rum in Fässern aus jeweils unterschiedlichem Holz gelagert. Sehr interessantes Projekt (danke an Flo für das Teilen). In der Nase noch ähnlich zu den Eichenfässern, am Gaumen aber eine eigene, leckere Note.
