Wagemut Fasssprache: Walnut Rum N. 15 2023
"You wouldn't guess walnut," one taster admitted — but the six months in a new walnut cask do turn this Trinidad base spirit spicy, woody and distinctly nutty, with a meaty, chestnut edge a few describe as almost savory. The palate runs full and intense at 63%: maple and date sweetness up front, then salt, bitterness and an oily-nutty finish. Part of a wood-experiment set, not a polished sipper.

Daring Cask Language Project (Cask Strength) It is to be expected that the best possible rum is not used for such a project. The base rum is comparatively fizzy without any particular character. 1st flight: Base rum / all Oaks It's interesting how much the differences are between individual oak types. I was particularly surprised by Mizunara. 2nd flight: base rum / special woods Insanely different, from bad to good, everything was there. Many thanks for this interesting project.

Barrel language N. 15 Walnut vs. N. 01 Base Rum. The 6 additional months in the new-make walnut barrel have darkened the color by a whole 10 levels. Nose: you can tell that walnut wood is aromatic. It rounds off the base very well and brings its very own aromas. Has a spicy-woody-nutty effect. Gets a slightly meaty touch, like meat salad, but not really disturbing. Could also go in the direction of chestnuts. A little dull or muffled overall. 7,1 Palate: intense and quite full-bodied. Not immediately as bitter as the base rum, but first somehow tart-sweet, like sugar and maple syrup or fruit bread, then immediately salty, bitter, tart. The sweetness also reminds me of dates. It is also woody and spicy. Oily and nutty at the back. A little difficult overall, I can't quite get to grips with the aromas. 7,3

Daring barrel language, 16 times the same basic rum stored in barrels each made of different wood. Very interesting project (thanks to Flo for sharing). Less fruit, but more spice, wood and nuts.
