Part of a for-fun experiment: one Trinidad base rum split across sixteen different oak casks, and this is the Caucasian oak version. Six extra months in new Caucasian oak darkened it a lot and pushed the fruit from lime and green apple toward passionfruit and maple-syrup sweetness. The palate turns woody and spicy — nutmeg, licorice, a salty-smoky "speckige" bacon note. At 63% the alcohol runs a touch hot, and several tasters wished the cask had a bit longer to settle in.

I got it from Michael, what can I say. The high-proof cask expression doesn't really convince me, unfortunately. Wood is definitely noticeable, also some spice, but it lacks that certain something. Quite okay, that's it.

Cask language No. 07 Caucasian Oak vs. No. 01 Base Rum. The 6 additional months in the new-make oak cask from the Caucasus Mountains have darkened the color by 8 levels. Nose: at first briefly alcoholic, but less than the base, also less peppery, but fruitier and sweeter. The fruit shifts from lime and green apple more towards sweet-sour passion fruit. Added is a pleasant maple syrup sweetness with a fine smoky tobacco note. Pleasant. 7.5 Palate: strong cask influence, woodier, spicier, fuller. At first also bitter-salty, but quickly more intense towards nutmeg and licorice, which also gives a bitter, bacon-like sweetness, more intense than the base. Strong-bitter-sweet, good. 7.5

Daring cask language, 16 times the same base rum aged in barrels each made from different wood. Very interesting project (thanks to Flo for sharing). Somewhere between the fruity No. 3 to 5 and the spicy No. 2. Of the barrels with "Oak" in the name, American Oak and Caucasian Oak pleased me the most.

Daring cask language project (Cask Strength) It is to be expected that the best possible rum is not used for such a project. The base rum is comparatively spritzy without special character. 1st Flight: Base Rum / all Oaks Interesting how much the differences are between individual oak types. Mizunara surprised me especially. 2nd Flight: Base Rum / Special Woods Insanely different, everything from bad to good was included. Many thanks for this interesting project.

Absolutely great project. Only learned about it through the Rum X action. A lot of fun to explore. The YT videos are also mega informative. Good choice of base product, good alcohol integration. American: classic 6.3 German: spicy-woody 6.6 French: velvety-oily 7.3 Kiri: surprise 7.4 Mizunara: good complexity 7 Walnut: little influence 6 Chestnut: not so distinctive 6 Mulberry: iodine/smoky 6.2 Cherry: dense 6.8 Pear: normal 6 Ash: orange 6.1 Tokaji: sawdust Caucasian: woody, fruity, fresh 6.4 Carpatian: European Bourbon 7.4 Acacia: multilayered 7 A slightly longer maturation would have been even better to bring out the nuances more. But first you have to manage that. Overall, there are already considerable differences in how it developed. Hats off for the project, very fun and interesting.

The Caucasian Oak finish gives the rum a distinctive earthiness and depth - marked by smoky, mineral and nutty facets. This variant clearly stands out from fruity or sweet barrel aging and is aimed at lovers of a powerful, structure-focused flavor world - puristic, characterful and intense in expression.
