Overall a fantastic, elegant and round rum that must be one of the absolute best low ABV 5 years old rums. This one has been on my shelf for a while. Everything from St. Nicholas Abbey is hard to get in Sweden so I waited for a second bottle before opened it up. This is the first aged rum produced by the distillery all by themselves. It’s made from their white rum that’s made from cane syrup in their hybrid still (column/pot) whereafter it’s aged in old bourbon barrels that previously contained their longer aged molasses rums from Foursquare.

Well. Its nice. Im a bit overwhelmed by some of the scoring. But... Its personal. A light but rich for 40% good half Barbadosy and hal agricol dna. Banana. Grass. Apples. Nice. Too pricey. דוגמית 30 ובכן. מאוד נחמד מה שיש לנו פה. אבל לא מעבר. לא הייתי קונה שום דבר של סנט ניקולס כרגע. בטח לא את ה12 ו15 שהם בכלל ממזקקת פורסקוור. הפרופיל מתוק. טעים. סוכר. דשא. שוקולד ודבש. קצת תפוחים. הדרים. כיפי.

This has a very different profile to the unaged version. It seems more refined and less vegetal. There are some fruits (apricot and banana), sweetness (toffee and caramel), peppery and almond notes. It is great to sip neat, albeit at 40% ABV it is fairly subtle in flavour, which is probably the main drawback.

Very disappointed given the manufacturing process that looked promising. Then I don't understand why do a pot still distillation and then pass it through a column and output at 92%, why make cane syrup and then dilute it with water when the cane fields are on site and fresh juice would be possible.

A very nice rum for the young age. The small distillery uses only sugar cane syrup/honey for its production. This rum presents elegant tropical fruit notes, mocha, some wood and white pepper. Very balanced and well-integrated alcohol. Already very good for sipping.
