Tasting date 05.08.2026 Rum Nation St. Catherine. First introduced by my good friend Mr. Silas Nørregaard. Nose: Floral - fruity ester notes, peaches mixed with olives, spicy notes, light Bourbon cask notes. Palate: Fruity, turns quick into light dry spices, some grape acidity, with refreshing ginger. Overripe dark prunes and mirabelle, lovely balanced floral sweetness. Residual taste with overripe fruits, light tropical mixed with black prunes, black currents. Complex mixed fruit notes. Dryed fruits like white grapes. Nice spicy balance, light peppery and allspice. Floral notes, mixed with light dark syrup notes. Pleasant barrel notes. The glass: Bittersauer pipe tobacco, light pleasant oak notes. Tasting “In the cave”

#6470 11.03.2026 Relaxing with some samples and some nice Trance by Static Movement and Entima. A pretty decent bottling. Intense and fresh nose with ester, fruits and olive. The palate is medium intense and oily with fruits, ginger and dried fruit. There is a nice spicyness to it. The finish is very long and fresh and medium spicy with ginger and medicinal notes.
