Venezuela is South America's great rum nation, home to Diplomatico and Santa Teresa, and to one of the strictest aging laws in the world: a minimum of two years, matched only by Cuba. Built from molasses and cane honey, distilled on pot stills and batch kettles, then aged long in solera systems, Venezuelan rum is soft, rich and dessert-like, sometimes openly sweetened, and made in a country whose economy has collapsed around it.
