8,2:On the nose, very roasted, charred oak notes like dark chocolate, coffee, leather, roasted nuts, spicy, pears and banana, dried fruits, earthy with tobacco, musty, metallic, bump into our nosetrils. On aeration, the molasses brings floral hints, cigar tobacco, dried apricots and raisins are clearer, pepper, vanilla and toffee, confectionery, and again some hints of calvados. 8,1:On the palate, the attack is mild at first, with roasted wood notes like leather, mocha, roasted nuts, caramel, later burnt sugar, smoky and peppery, fruity with raisins and dried apricots, hints of pineapple, later banana, slightlytannic,...and when the rum is really oxidized, a little magic arrives with industrial notes like rubber, petrol and tar, metallic patina, tobacco, very reminiscent to Caroni hints. 8,1:The finish is medium long, dry&tannic, the oak is roasted, spicy, the fruits dried, some hint of banana still present, as the molasses is really musty, with flowery hints, medicinal notes still obvious. Zacapa with Caroni hints, if well rested 😆.

The good old zacapa, worlds apart from the current bottlings. Significantly drier, woodier and more complex. Beautiful thing! Too bad that zacapa no longer produces like this...

Avg Rating 7.5/10 over 230 Rums

Guatemala makes soft, sweet, dessert-like rum, and it does it high in the volcanic highlands where the thin, cool air slows maturation. Its base is virgin sugar cane honey, a concentrated first-press cane syrup rather than molasses, and its calling card is the Sistema Solera. One name towers over the country: Ron Zacapa.
