The beautiful surprise of Saturday night! I contacted this distillery to give them the friendly advice to join RumX. Intrigued and interested, we chatted a bit; and a little wolf poked its nose at home! At first opening, I really wasn't sure I'd like it, the yeasts and fermentative side were very present. I put the bottle aside for a month and then, the magic happened. The green bananas took over, the ferments mutated into a beautiful puffed rice close to a Kinder Country, a herbal and green side could almost make us believe in a cane juice (it's an organic molasses fermented for 3 weeks), and the finish close to a pastry or marzipan is enhanced by light spices that last. Alcohol very well integrated, it's easy to drink; but it doesn't lack flavor. Long live this small distillery that succeeds very well in its entry into the rum world with a very surprising Jamaican low esters profile.
