Tasted this unaged rum during my recent visit to the distillery. It’s coming from their highest plot and is said to reflect the essence of Mount Pelée and therefore reveals a rich and authentic character with its 50,5% and organic origin benefited from the ideal sunshine on the slopes of the Mountain and is therefore named “Soul of the Mountain”. It rested for a minimum of 3 months with a slow ABV reduction during 2 months before bottled. The nose is complex, aromatic, sweet and spicy with scents and notes of sugarcane, lychee, honey and ginger. At the palate it’s balanced, full bodied, round almost silky, sweet and spicy with flavors of mineral, honey, sugarcane and ginger. The finish is long with the flavors persisting.

#5265 19.04.2025 Enjoying some samples while watching the TV series Reacher. Nose Medium intense, sugarcane, faint smoke, light honey, spice, light citrus. Palate Oily, balanced, fresh, medium spicy, ginger, light honey, light minerals, light citrus. Finish Long, oily, balanced, fresh, velvety, medium spicy, ginger, light citrus. Empty glass Honey, ginger, faint chocolate, light citrus. The longer it rests the more flavours appear. I love the texture on the palate which is like velvet.

Depaz à sorti une très bonne cuvée je retrouve beaucoup de caractéristiques des rhums agricoles Martiniquais : canne à sucre , agrumes, épices , fraîcheur. L ensemble est un joli velour. Un peu d'originalité avec de l anis et du minéral.

Goûté lors du RhumFest Paris 2025. Un agricole réussi. Beaucoup de fraîcheur, des notes herbacées sensibles mais aussi un côté minéral. Jolie canne. Une note étonnante d'anis également. Plutôt surprenant et réussi.

Whisky Live 2025 - Rhum Fest 2026. Tasting notes are confirmed, scored a bit higher. Unusual profile for an unaged agricole, where floral note is dominant. On the nose is more similar to and eau de parfume rather than to a rhum, with roses coming out of a bunch of flowers. Other than this, this a typical unaged Depaz profile, straight, grassy and sugar-y.

Très belle surprise au rhum fest un blanc très expressif au nez vraiment surprenant ! et une bouche dans le même registre a regouté au calme car dégusté en fin de journée !
