Overall an OK rum, but quite overpriced. Tasted it at the Stockholm Beer & Spirits Fair 2023. This Louisiana rum from Bayou is a molasses rum. The sugarcane has grown in the soils around the Mississippi River Delta. After fermentation it’s distilled in a copper pot still whereafter it’s aged in ex-bourbon barrels and finished in ex-sherry barrels for a total aging of up to 6 years using the Solera method.

A very nice and fruity rum. A nice everyday and easy to drink rum.

👃 I smell candied fruits, woodiness, burnt grass, and a bit of vanilla. 👄 When drinking it, caramel, a bit of honey, and the roundness brought by the sherry come through, with a short finish. You get an average 6-year-old old rum, far from Caribbean standards but probably suited to its national market.

Unfortunately, I expected a bit more here. It has nice woody notes. But also a taste of dark fruits. However, the aromas are unfortunately weak and flat. The taste disappears quite quickly. A shame, but I can still recommend a distillery tour.

Nice for the US I would have thought sweeter, but no, it's cool. To sum up, my tasting notes: Nose: Caramelized, Vanilla, Woody On the palate: Orange zest, Brown sugar, Woody Finish: Gingerbread, Brown sugar, Peppery
