Derrière ce « fût de whisky Gallois » se cache la distillerie Penderyn, qui produit du single malt dans la région des Brecon Beacons. J’ai découvert récemment leur travail, et j’ai beaucoup aimé, c’est léger, très fruité et élégant. Alors, qu’est ce que ça apporte au rhum ? Premier nez sur les fruits secs, la figue séchée, et un mariage heureux entre les céréales & la canne fraîche. Avec plus d’aération, des notes briochées se dégagent également. C’est très plaisant. En bouche, la rondeur de la Guadeloupe est là, bien que l’origine ne soit pas dévoilée, pour moi il n’y a aucun doute ! De beaux fruits frais, cassis, myrtille, fruits des bois, léger menthol prennent leur place durablement -je ne sais pas trop où est passé le whisky, mais c’est extrêmement réussi. La canne est toujours présente, en fond, et en texture, mais sinon on pourrait croire à un petit TDL en fermant les yeux. Vraiment top. Finale moyennement longue, degrés oblige – même si ça ne choque pas – chaleureuse, fruitée, sur le cassis, une légère vanille, très légers épices, et enfin quelques légers céréales en arrière plan. Ca y est, le whisky est revenu, mais sans prendre trop de place. Verre vide : vanille, fruits & poire continuent d’envahir les environs.
