Nice continental Guyana rum, low in esters and reminding me of a Speyside whisky. Fruity, a hint of green notes, creamy/cake-y, a pinch of salt. 80 points Nose: a bit of varnish and glue, and a hint of olive, and an inside swimming pool (chlorine) and a pinch of salt. Yet, there are quite some cake dough notes: cake batter and pastry. Also quite some yellow stone fruit, honey, and mint. Was this a rum from the Speyside? Palate: a fruity and oily attack, followed by honey, vanilla, cream, aniseed and a sour note. Then, pepper joins. Varnish and raisin are there but subdued. Finish: still rounded and a bit saline, more on olive again, plus pepper and a nice note of varnish.

Demerara Distillers is the company that ended up holding everything. As Guyana's only surviving rum maker, its Diamond plant runs the world's last wooden pot stills and the last wooden Coffey still alongside modern columns, draws 24 different marks from them, and blends them into El Dorado. It is also the reason most Demerara on the shelf comes from one address.
