Ein neues kleines Projekt aus Deutschland. Erstmal positiv zu bemerken: Sehr transparent und anschaulich. Alle Infos auf dem Label (das ich recht schicke) und dazu schön aufgearbeitet, statt bloßer Angabe. Zum Stoff an sich: Trotz Fassstärke (diese Abfüllung gibt es auch in Trinkstärke) und recht jungem Alter sehr weich, der Alkohol ist gut integriert. Der Grund-Rum an sich war wohl sehr nichtssagend, denn trotz zweier Fässer inklusive Bockbier-Vorbelegung haben wir hier einen erstaunlich zurückhaltenden Rum! In der Nase fast nichtssagend, ist der Gaumen sehr angenehm. Mit einem weichen, spanischen Rum-Charakter (obwohl aus Guyana!) und einem anschließenden sanften Biereinschlag. Letzteres ist für mich bemerkenswert: Ich bin beileibe kein Fan von Finishes und alles Richtung Bier fand ich in der Vergangenheit eher schwierig. Der Mercator liefert das Finish aber, wie es sein sollte: Dezent, gut in den Gesamteindruck integriert und nicht überlagernd. Zu Beginn fast nicht wahrnehmbar, entwickelt sich auf der Zunge ein angenehm maltier Geschmack, der langsam in einen hopfig-fruchtigen Abgang übergeht. Für eine höhere Bewertung fehlt mir etwas Intensität und Geschmack aber dennoch für mich ein gelungener Einstand des Mercator-Rums!
