During my recent visit to St. Nicholas Abbey together with some other Swedes we tasted this rum supervised by Larry Warren in the VIP room. They use cane syrup that after fermentation for about 5 days is distilled in their pot-column hybrid still. Before bottling it has rested for 3 months in stainless steel tanks. The nose is subtle, sweet, fruity, vegetal, spicy and round with scents of banana, basil, vanilla and toffee. At the palate it’s full bodied, creamy, fruity, round and spicy with flavors of coconut, peaches, pears, mango, banana, vanilla, pepper, coriander and caramel. The finish is medium long.

#5816 02.10.2025 First samples after returning from Whisky Live, Paris 2025. Nose Fresh, light, vegetal, sugarcane, banana, vanilla, spice. Palate Light oily, fresh, fruits, vanilla, sugarcane, light banana, citrus, spice. Finish Medium long, oily, citrus, vegegal, light banana. Empty glass Vanilla, citrus, floral, light caramel.

Very sipable unaged rum. This is distilled from cane syrup as opposed to molasses which makes it somewhat of an oddity as a Bajan rum. The flavour profile reflects this and has more agricole typical flavours and what stands out for me is grass, olive, earthy, floral. At 40% it isn’t bursting with flavour intensity unfortunately but it is very nice. After a long while the residual flavour in my mouth is a bit like what I would expect if I had bitten into a saplings branch.

A very interesting, unaged rum. Made from sugar cane syrup, it has clear traces of sugar cane, grass, overripe banana and citrus on the nose. Very floral. Very balanced and smooth on the palate. Alcohol well integrated. Again floral, fruity and grassy notes, tending somewhat in the Agricole direction, but still independent. Somewhat nutty, vanilla and again notes of overripe banana. A different kind of unaged rum.

Nice nose on banana but it falls apart on the palate. Too bad they don't offer a taste of the 60% version. Very disappointed again after all I had read about the distillery which was very promising.
