The Wild Parrot Enmore 1991
Sip this one neat and slow — it's a 28-year Enmore pot-still from Guyana, all dark wood, plum and dried fruit up front, then licorice, tea and a graphite-and-pencil-shavings dryness underneath. One taster called it more "intriguing than inviting": complex and layered, with bitter coffee and tannins on the back end and almost no sweetness. Demerara fans of heavy, ashy, leathery profiles will get it.

A lovely old rum from Guyana. The nose is amazing! Dark and heavy like all good Demeraras. Licorice, fruits, wood, dark chocolate, spicy, has a sweetness to it that I really like as well. I can detect a certain creaminess as well. A long finish with slight bitterness.

04.09.2022 Meeting up for a nice after event party at my hotel. Good rum and food spread over a full day. Nose Wood, light roasted, fruity, anise, varnish, light tar. Palate Wood, roasted, fruity, varnish, earthy, light herbs, licorice. Finish Long, wood, roasted, berries, light herbs, light medicinal.

Beautiful sample. A taste of dried fruit (plums) and green tea which gives way to aniseed bitterness. The bitterness/bitterness is reminiscent of over infused tea when you take the bag out too late. The colour is beautifully dark, I sniff again and it's an absolute delight what enmore has created. Very good filling from WildParrot

Wonderful aroma of plums, which transitions into the scent of green tea. Taste of mocha coffee and bitter chocolate and finishes with spicy liquorice and green pepper

On the nose, in the first attack, we find plum, raisins, date ... It is not at all aggressive on the nose with its 53.6%, on the contrary it is very sweet. The nose is fruity and fresh but not only, because with aeration appears a heavier profile with notes of roasting, leather, wood ... The nose is undoubtedly attractive. In the mouth, it is creamy and less fruity than the nose, it is more woody and fat on the chocolate. We find some burned caramel. But a rather disturbing bitterness is present (bitter coffee, tannins ...). The finish is long.
