It gets off to a good start with a lovely fruity nose (very citrusy, between tangerine and grapefruit) plus a light floral side and well-presented spices. A little alcoholic, but counterbalanced by buttery/brioche touches. On the palate, it's the same old thing, with more fruit (grapefruit) and spices (nutmeg, exotic wood, Pier Import!), and some woody bitterness at first, which then fades. Freshness and tingling reminiscent of Brede Mafane from Madagascar. A long finish with a fruity, vegetal and spicy cane, Waow!

Depaz is the rum born from a volcano. After Mount Pelee wiped out Saint-Pierre and his entire family in 1902, the orphaned Victor Depaz came back and planted cane on the very slopes that had killed them. The distillery he built in 1917 still stands at the foot of the volcano, and its agricole is among the most decorated on Martinique.
