Holmes Cay Uitvlugt Guyana 2003

Sipped neat at 51%, this is a soft, drinkable Guyana single cask that most tasters take without water. Expect caramel, vanilla, cherry and dried prune, with a lick of cola and a faint burnt-tire note in the finish. One reviewer called it "sweet but not syrupy" — flavourful and balanced, though the ex-bourbon cask does a lot of the talking.

Delicious, very drinkable to those who can face the proof. The bottle says it’s good with water, and I’m sure it is, but I didn’t get that far. It’s sweet without being cloying, with lots of dried fruit notes.

The nose is very fresh, with notes of caramel, fresh herbs and vanilla. Round and slightly caramelized on the palate. The whole is complex and well-balanced. The finish gives way to minty, aniseed notes.

Uitvlugt is a ghost with the best reviews in Guyana. The distillery closed in December 1999 and its stills were hauled to Diamond, leaving the stillhouse in ruins, yet aged Uitvlugt rum is among the highest rated on RumX, with one Cadenhead 1964 reaching 9.9/10. For four decades this was the transfer point where every wooden still in the country waited before moving on.
